Prices for plates and menus

Restaurant owners undertake to offer at least :

• a three-course meal
• a menu: starter + main course or main course + dessert
• a hot drink: coffee or tea
• free water

In line with its ecological transition plan, this offer must also be exclusively vegetarian.

Restaurants are free to offer a wider choice of dishes and drinks outside the agreed prices.

As far as possible, restaurateurs are committed to providing sustainable food: food that is seasonal and local, varied and original.

Restaurants, the Commission de l'alimentation and the Direction de l’UNIL have agreed that prices will be modified according to an algorithm. Any price adjustments will be calculated each year by adding the changes in the following official data to the previous year's prices:

• the consumer price index (CPI) Food (Source: FSO)
• the minimum wage according to the Convention collective nationale de travail (CCNT) pour l'h39;hôtellerie (Source: Gastrosuisse)
• Wage annuity according to Swiss wage index (Source: FSO)

These three indicators are weighted at 30%, 30% and 40% respectively.

Any price adjustments come into effect at the start of the academic year.
